This is a wedding cake I did for a wedding about a month back or so, not my best work because they wanted it in 4 days...fml.

Crappy Wedding Cake:

Possibly the best cake I have ever done, the lines are clean and perfect

And a small sugar sculpture for your your enjoyment, me and the head chef got bored at work and did this a few days ago to decorate the bar.

I only will post these because Todd isn't on this site. And luckily, I recently took one, which is rare for me (Last one other than this was taken in May, I believe). This one was shortly after cutting my hair and smoothing it out, whereas before it was long and quite frizzy (stylishly so).

More Adventures in foodgasms with your large negro friend Butch/Hoda/Daryl...what ever it is that you call me.

Fruit Platters that I had to make from scratch while talking to Adam, probably why I was so on edge, so much damn fruit to cut peel and slice. And I had just made and baked 800 god forsaken cookies, you will see them in the corner.

Fruit Platter Mania:

Coming up with plating ideas for today's special: Wedge salad with heirloom tomatoes...the pretty colorful disc on top is a slice of watermelon radish.

This was the first thing I did this morning...I had to prepare a child's birthday cake...Its red velvet cake with lemon cream cheese frosting and a pink marbled fondant. I had to make it look like a derby hat box. I am pretty sure this was taken while I was putting the chocolate designs on the cake.

I drank a bit last night...and that maybe why I am so cheery...Johnnie Walker Gold Label FTW!!

I approach it just like I treat approach else, food, women, writing, drinking or playing the guitar. You need passion, patients, diligence, love, and above all else you have to have the balls to take a gamble on something that has the potential to blow up in your face completely. Can't tell you how many of my cakes have turned out to be hard as bricks, or souffles that don't rise(UGH)...just gotta power through and not be afraid to fail.
